For those of you with a sweet tooth and who crave something different all the time, this one is a must try.
I have always relished Pineapple Kesari made with Semolina and I was wondering why not a Pulao and that's how this dish turned out.
I have always relished Pineapple Kesari made with Semolina and I was wondering why not a Pulao and that's how this dish turned out.
½ cup water
300 gm sugar
1 cup chopped pineapple pieces
4 tbsp butter
3 cardamoms
3 cloves
1” piece cinnamon
3 tbsp cashew nuts
3 tbsp raisins
1/2 tsp pineapple emulsion
Method:
1. Cook the pineapple with ½ cup sugar & 1 cup water for 5 minutes
2. Drain the pineapple & add remaining sugar to the syrup
3. Cook on low flame until it reaches 2 string consistency
4. Remove & add pineapple pieces, emulsion
5. Keep aside & heat 1 tbsp butter & add cashew & fry till pale in colour
6. Add the raisins & fry till they bloat
7. Remove & keep aside
8. Wash & soak the rice for 10 minutes & drain well
9. Heat 2 tbsp butter & fry the whole garam masala till pale brown
10. Add rice & stir for 2-3 minutes
11. Pour milk & water into a rice cooker & bring to boil
12. Add rice & cook till the cooker reaches keep warm mode
13. Mix in the pineapple mixture & dot with butter
14. Stir gently & set to cook mode once again
15. Cook for 10 minutes. Sprinkle fried cashew & raisins. Mix lightly & serve hot
