Baked Macaroni - Indian Style

Are you always running out of ideas to cook up an interesting meal for Dinner? Are you confused about the preparation methods with Macaroni or any pasta? or to entertain your guests?

Here is an interesting recipe incorporated to suit the Indian taste buds.

Presenting the Baked Macaroni - Truly Indian.

Baked Macaroni
Ingredients:

200 gm macaroni or any other pasta

200 gm tomatoes

2 tbsp oil

1 large onion chopped

2 tsp minced green chilly

3 tbsp chopped capsicum

Oregano or Basil to season

Salt & Pepper to taste

Ingredients for the White Sauce:

1 cup milk

1 ½ tbsp flour

2 ½ tbsp butter

100 gm grated cheese

Salt & Pepper to taste

Method:

1. Boil 2 litres of water with 20 gm salt. Cook pasta for 10 -12 minutes.

2. Strain in a colander & hold under running tap. Mix a tsp of oil to prevent from sticking.

3. Heat butter in a pan & add flour & stir for ½ minute. Warm the milk & add all at once. Stir well till sauce is thick. Add seasoning. Cool & mix in grated cheese.

4. Heat oil in a pan & add onions, chilies & capsicum. Fry till dry & add chopped tomatoes & seasoning. Cook till it reaches a saucy consistency & remove.

5. Mix pasta with the tomato mixture. Place ½ of the white sauce in a greased baking dish & spread the pasta over it. Then pour remaining white sauce.

6. Bake in a moderate oven till the top is light brown.

Baked Veggie Semolina

As a child, I was such a fuss pot over vegetables. I would do anything under the sun to avoid eating veggies. My mom sure did have a hard time convincing me to eat veggies and would have come up with stories to make me eat. Yes....I loved to be fed. Food would automatically go down to my tummy if I was fed by mom (wonder how many years I was fed by her). Oh yea....a mom is a mom always and she still feeds me whenever she visits my place or vice versa.
In my early teens, my mom had prepared this out of the world dish which was baked and filled with a lot of veggies and I instantly fell in love with it. I finished the entire serving that was given to me and asked for more. My mom knew the trick so she started preparing exotic dishes be it Bakes, Soups or Sandwiches and found a way for me to stuff veggies as well as part of my diet.
History repeats itself and so do my boys have a bit of my genes. They do make a fuss if they are given the regular veggie subjis. Soups is something that they have always relished and they have started to appreciate baked dishes as well. One fine evening, I randomly decided to prepare this dish which was my favourite as a child and I started to get my ingredients ready and I realise that I did not have carrots and beans. I sent my maid to pick up some veggies and Mr.Rain God was suprised I guess at the fact that I was baking something after ages. It poured for close to half hour. She came back with veggies but not what I wanted. Then my neighbours Adhi, Viji and Sangeetha came of help with what I needed.
Quickly put everything together and prepared it and we thoroughly enjoyed our meal with Bread and Butter. There was hardly any left for Satish and I cursed for not having prepared in large quantity that I could have shared with my neighbours as well. The below is recipe certainly is for 3 adults and a couple of kids.

Ingredients:
2 cups mixed vegetable boiled with salt & pepper (Beans, Carrot, Peas & Potato)
2 tbsp butter
½ cup chopped onion (1 small onion)
1 green chilly
½” chopped ginger
1tbsp chopped coriander leaves
1 recipe semolina sauce
50 gm grated Mozzarella cheese (I used Cheddar cheese)
Pepper and salt to taste.

Method:
1. Heat butter. Fry onions & chillies till soft.

2. Add ginger, coriander leaves & the vegetables. Mix well, remove & correct seasoning

3. Make semolina sauce & mix with prepared vegetables.
 
4. Grease a pie dish with little butter & dust breadcrumbs (I did not have breadcrumbs when I prepared this a couple of days ago).

5. Pour the mixture into it. Sprinkle grated cheese over the bake.
Ready to be baked
6. Preheat the oven for 10 minutes

7. Bake in a hot oven at 200*c till the top is crisp. I baked for about 20 minutes and added another 10mins to it. 
Semolina Sauce
SEMOLINA SAUCE
  
Ingredients:
3 cups milk 
3 tbsp semolina (rava) 
2 tbsp butter 
1 tsp baking powder 
50 gm grated Amul cheese 
Pepper & salt to taste
 
Method:

1. Boil milk & sprinkle semolina little by little.
2. When slightly thick add butter and remove (it must be the consistency of Idli batter and not Dosa batter --- hahaha that's how my mom explained this to me the first time I tried this)

3. Cool & add baking powder, salt, pepper & cheese.
